Guacamole

Gaucamole

My friend Barbara lived in Mexico for a few years and gave me this recipie. She preferred the avocado squashed down with a fork so it was still a bit lumpy, rather than put in a processor, and I do agree with her. She put much more chilli in hers and loved the heat, as did the locals,children munching on chillis like we eat apples!!!

Ingdients

1 avocado

1 garlic clove

1 large,/2 small tomatoes

salt

chili, fresh or a few seeds

Smash the avocado with a fork to break it down, chop tomatoes very finely, make the garlic into a paste with the flat of a knife, add to the mixture, add finely chopped fresh  chili or seeds, and salt. Taste and adjust seasoning.

Wrap in a lettuce leaf and eat,  use as a dip with raw veggies. or a salad dressing.


Nutty guacamole

We love guacamole, but I wanted to get more protein into a vegetarian dish. Mixing seeds and nuts increases the protein level significantly.


1 avocado

1 soup spoon of hemp seeds

handful of nuts. I used almonds

1 garlic clove

1 large,/2 small tomatoes

salt

chili, fresh or a few seeds


I blitzed the nuts and seeds first in my Nutribullet,then added all the other ingrdients,mixed them until they were smooth. This is a less strongly flavoured taste, it needs extra seasoning. Dave found it too bland so added a tin of salmon to his and said it was delicious.
